Carlsbad Caverns

P1080029The elevators have been broken for years. The only way in, or out, is a mile long path climbing 800 feet in elevation. This makes the numbers of visitors even more impressive, almost as impressive as the caverns themselves. Welcome to Carlsbad.

Carlsbad Caverns National Park is actually about twenty miles from Carlsbad, NM, outside of the totally touristed and tiny town of White’s City. I think the cavern itself is bigger.

But that might not be saying a lot, because the cavern was HUGE. Fourteen acres of floor space, it’s the largest natural room in the Western hemisphere, several times bigger than Luray. And several times more impressive. P1080076The Chandelier was the most gorgeous, and the most aptly named. The nps had even strung lights up inside of it, making it glow a soft creamy gold. And some of the flows did their best to convince you they had been carved by elves.P1080115 P1080118

The lion’s tail and fairy forest were also pretty, but in a more rustic, popcorny way. Popcorn is a type of speleothem (rock formations caused by dripping or flowing water in caves, and my new favorite word) that looks like the movie theater snack. Surprisingly, I couldn’t find a sign or section on the brochure explaining exactly how the rough texture forms.P1080051

Despite the exquisite beauty of the cave, walking down into it felt wrong. Every instinct yelled at me, that the underground is not a place humans are not supposed to go. The bats didn’t help. We didn’t see any, because they only roosted in the caves during the summers in a part humans weren’t allowed into. However, this knowledge didn’t help much when you felt like you were descending into the Mines of Moria. Getting out felt great, but it was definitely an experience I’d repeat.

Food Shark

By our third day, I was beginning to become convinced that the Marfa food scene was a big performance piece.  Nine of the ten restaurants in town had yelp reviews of four or higher, but they were never open.  The first night we were there we drove past six, all of which were closed. The second day, we could only find two food carts that were open for lunch, and one was a horrible little thing that only served kale smoothies.  We were heading out of town, planning on peanut butter and jelly, when we drove past and saw that Food Shark, another food cart, and the highest ranked on yelp, was open.  Their regular menu has mostly vegetarian options, like the Marfalafel, but their specials usually are a meat dish.  Normally I would say this was a bad strategy, because if you’re always learning new dishes how will you practice enough to make them good?  I shouldn’t have worried. Today it was brisket sandwich and lamb kebab.

Man, those guys know how to cook meat. Admittedly, I have not eaten a lot of brisket on this trip, but that was second only to Smitty’s (coming soon!). It was so soft and tender I almost mistook it for pork.P1080003

The lamb would not have been. The way it was cooked seemed to almost highlight the best parts of the meat, rather than trying to gild a lily and adding something new. The flatbread it was served with was soft and fresh, and we were seriously considering asking to buy a tub of their hummus.  It was some of the only stuff we’ve encountered on this trip that wasn’t dry, gritty, or bland.P1080004

Marfa is really far from nowhere, so you probably won’t go there unless you’re into art or take my food recommendations really seriously. But if you do, don’t come early in the week. Art tours may be easier to book, but none of the restaurants will be open. And even then, beware of the performance art.

San Antonio Rodeo

We arrived in San Antonio to find our campground nearly full, and it was not until Dad spotted a poster that we figured out why. The rodeo was in town. In fact, it was being held at the fairgrounds just down the street. We had lucked into a campground within walking distance of the largest indoor rodeo in the country.
The main event didn’t start until 7, so we had some time to kill. I had no idea what team penning was, and it took me a while to figure it out. As far as I can tell, there are a bunch of calves or heifers or some small and agile kind of cow at one end of this big corral, and cowboys on horses begin at the other. All the cows have numbers plastered to their sides, and once the man in charge calls it out, it’s the cowboys’ job to separate out three bovids with that number and herd them into a smaller pen. The team who does it fastest wins. It was quite entertaining to watch, and I was amazed by how young some of the people doing it were. There was a girl who couldn’t have been older than eleven, wearing a sweatshirt that said, “Jesus, take the reins.”DSCF5404

We missed the pig races, and the petting zoo had a line out the door, but the Texan wildlife exhibit was open. A lot of the animals there actually made their main residence in Mexico or even South America, like the ocelot and coati mundi, who we got to watch eat the zookeepers hair. Even cuter than the prairie dogs was the racoon snuggling with an armadillo.

This rodeo didn’t only have bucking broncos, but bmx biking as well. A bike, without a mad mind of it’s own, is much easier to control than a horse, and the level of maneuverability was spectacular. An aerial trickster flew high into the air over a rather scared-looking volunteer, while another performer spun around like a ballerina with a bicycle. DSCF5426

Walking into the stock show was one of the oddest experiences of my life. I’d seen 4-H shows before, but only bunnies and some goats. Never had I walked into a room filled with hundreds of cows. The variety of breeds and the variations inside that category was nearly as impressive as the sheer quantity of biomass in that building. At a show pen, little kids showed off animals they could barely reach the shoulders of. Everybody watching in the stands seemed very enthusiastic about how their kids placed, but I was more interested in climbing to the top of the bleachers to look out over the rows upon rows of cattle.DSCF5446

Inside the swine barn I learned how you move a pig. It doesn’t go on a leash or a lead. It is simply guided by a switch. Presumably it has to be trained first, but even so, it was amazing how calm and controlled they were. Almost tripping over a pig was added to the list of odd experiences I was having that day.DSCF5461

By the time we’d found the least disgusting option (a corn dog) in a food court of donut burgers and deep fried oreos, it was time for the actual rodeo to start. We came in during the middle of the prayer, which was a truly odd experience. It was followed by a rendition of the National Anthem which was surpassed in awfulness only by the one from the Donald Trump rally in Eugene.

Bronco busting, both with a protective backboard so you won’t snap your spine and without, is insane. Watching it, I couldn’t help thinking about Spirit: Stallion of the Cimmaron, which was, and still is, one of my favorite movies. I simply don’t understand how we didn’t come to see anyone killed that night.

More hilarious and adorable, was mutton busting. Small children riding sheep. That pretty much says it all. They didn’t have a saddle or anything, and we’re just expected to grab the sheep by the wool, and hold onto it with their legs as it ran panicked across the arena. The finale, where all the kids were put on a sheep and let loose at the same time, was absolute mayhem.

I don’t understand bull riding at all. Unlike bronco busting, which serves to break a horse to make it tame enough to ride, it doesn’t seem to serve any purpose. No reward, then, unless you’re completely insane or an adrenaline junkie, and a very high risk. Bull riding has been called “the eight most dangerous seconds of sports” and I’m inclined to agree with that assessment, and add “the most insane.”

However, it is kind of fun and horrifying to watch. Roping and bull wrestling at least serves some purpose, and know I understand the expression “to take a bull by the horns.”

If you ever stumble into a rodeo like we did, don’t hesitate to go. Kids will love it, although you’ll probably end up waiting in the ridiculously long petting zoo line, and they might be upset if they aren’t signed up for mutton busting. Oh, and look out back of the cattle barn for the cow showers.DSCF5469

Valentina’s BBQ Tacos

P1070473We have recently discovered that Velvet Taco is (gasp) a chain, albeit a small one.  This picture was taken in Fort Worth, Texas.  Apparently, it has locations in Texas and Chicago, nowhere else. This does not negate its deliciousness, but does make it ineligible for the title of best stand-alone tacos on this trip. That spot was swooped up a week later by Valentina’s Barbeque tacos. You can’t get more Tex Mex than that, and you can’t go better than Valentinas.  An unassuming shack in a convenience store parking lot is not the place most people think of when they think about Austin bbq. But unlike Franklin’s, the wait here is ten minutes, and you can get chips and queso to hold you over until then.

And how to even describe the tacos. The sausage taco was fabulous, and that’s from someone who isn’t even a big fan of sausage. This was the best sausage I’ve ever had. It was quite solid, almost hotdog-like, but better, because it was barbeque. Flavorful, without being too spicy. The taco had this, and guacamole. What could be better?

The other tacos, for one.  Pulled pork, and chicken, and brisket.  I’ve learned that Texas does actually have good pork, although most places don’t have good brisket. This is probably because beef is harder to cook, which may be the reason we had such great meals in Texas.

When my dad put up on Facebook that we had gotten bbq tacos in Austin, a friend of a friend, who was also from Eugene, immediately asked if we had gone to Valentina’s. When the times published their 36 Hours in Austin article, Valentina’s was on the list. The people from Nerdist, a popular youtube channel, even included it in one of their videos. So if you don’t trust my word, trust everyone else. Go to Valentina’s if you’re in Austin. It is definitely worth the drive.

Oh, and don’t miss Lick ice cream on your way back to town. It’s a lot like Red Wagon creamery here in Eugene in its specialization in local and odd flavors.  I had the lime and cilantro, which was fabulous. The perfect mix between bitter and sweet, with that little kick of parsley flavor that makes it so unique blending right it.  But don’t worry if you aren’t adventurous, they have normal flavors like chocolate too.DSCF5322

Perot Museum of Science

P1070410I wasn’t expecting much from the Perot Museum in Dallas, TX. It was described to me as a highly interactive science museum, so I was thinking it would aimed mostly towards, and dumbed down for, little kids. To a certain degree it was, but there was a lot for children of all ages to explore and learn.And when I say a lot, I mean three full floors plus a mezzanine level and traveling exhibits in the basement. The exhibit when I was there was about bioluminescence, which persists in being both one of my favorite words and one of my favorite things in biology. Mostly I learned about the habits of fireflies. Did you know that female fireflies have learned the flash patterns that attract males of different species, and when the guys come down looking to mate, the girls eat them? And that male fireflies sometimes band together and sync up their flash patterns to become a great pulsing bush that’s impossible to miss?The fossils on the top floor were great. Texas is prime bone-hunting country, and a good number of their dinosaurs are natives to the state. Nanuqsaurus, meaning “polar bear lizard”, is a clear exception. The mosasaurs however, were not. P1070399Most of the animals in the exhibit showing how these giant water monsters evolved were found in the Southwestern United States, which was once covered by an inland sea. It was called the Western Interior Seaway, which provides backing to Keyes’s Law. “Anyone with the authority to name anything by definition lacks the creativity to call it something cool.”

This law was disproved only minutes later, by Gomez’s Hamburger in the Space Hall. This hall didn’t have any real stuff, that’s all at the Smithsonian, but it did have a lot of cool graphics explaining stuff in space and physics. Any kid who went to school after 1990 has seen the video about orders of magnitude where it zooms in or out through our universe. This exhibit had a different version of that running, but you could control it with a dial, and this one had cool things on it, like Gomez’s Hamburger.

The third floor housed the geological and weather science. There was a platform that simulated an earthquake, proving that we’re all doomed if the megaquake hits the northwest. Like the Museum of Science and Industry in Chicago, they had an artificial tornado. It was a bit smaller, but the exhibit did a better job explaining how they form.

Behind this was the mineral hall. Scientists are often thought of as calculating and analytical, but I bet that all mineralogists are swayed by how cool rocks can look. P1070438P1070447P1070464

And this being Texas, they had a big exhibit on oil and how it’s procured. But to my surprise, it also talked about the dangers and problems with fracking and oil in general, and explained a little about alternative energy sources.

Downstairs from that was the life and biology exhibits. This had a good deal of taxidermy, with a card by each animal stating a cool adaptation it has, or something about how it evolved. Like other small museums we’ve been to, its dioramas featured the landscapes and wildlife native to the region.

The really interactive exhibits for kids were behind that, mostly about robotics and the human body. The coolest thing was this rod that was laced with LEDs and programed to show a picture when it spun. I think that if you already knew everything that was in the museum, it could feel a bit trivial. But with the level of science education most kids get in school, it think there’s stuff to be learned from it up through high school. So if you’re a kid interested in science in the vicinity of Dallas, you should come here. And if you’re like me and have to read every sign, come early.

The best ribs I have ever had. The best ribs I have ever had. Soft and succulent. Delightfully smoky. We had to ask their secret. The owner, Micheal, revealed to us that they only cook their ribs for four hours, a fraction of what many restaurants claim. But for the second two hours, they shut off all the heat, and just let it circulate in the smoke. Be careful not to eat the bones. I mean that seriously. They were soft and smoky, and if they weren’t so dry I might have eaten them willingly.P1060849

Not one of my favorite places, I must say. Everything was fine, and the atmosphere was cozy, but I guess my standards have gone up over the course of this trip. It was good, so don’t protest if your friend suggests going there, but maybe suggest Bao and Noodle (next blog) instead.

Entering Texas, we have left the land of pork in favor of beef. Part of me feels sorry for the poor people who don’t get real ribs, and try to substitute them with beef ribs, which in any circumstance are inferior. But, they do make damn good brisket.

Bao and Noodle

I am a pessimist in all areas except for food. The human ability to make things taste good never ceases to amaze me, and never have I been more astonished than by Bao and Noodle.
P1070253We started off with an order of bao, dumplings, and scallion pancakes, and were immediately blown away. My only previous experience of bao was hearing it mentioned in a Firefly episode, and so, was very impressed. The only problem was that having my first experience be so good, is now I’m always going to be disappointed by other restaurants. The pork and cabbage dumplings were the night’s specialty, and they certainly were special. The best thing about them was the broth they came in, soft as milk, but rich with the flavor of country ham, and greens as delicate as rice paper floating like tea leaves on its surface. The scallion pancakes were cooked slightly unevenly, one edge darker than the other, and I think this was on purpose. It offered you a choice between crunchy or more chewy.P1070254

If the appetizers blew us away, the main course kicked the wind up to hurricane status. Starting on the left, we have Dan Dan noodles. Unlike many restaurants, they leave the dish without a lot of heat and provide you with a jar of Sichuan pepper hot sauce. Simply the smell wafting out of that jar was spectacular, but enough to make your nostrils burn. Being someone who can’t take a lot of heat, I appreciated the consideration. The chili sesame paste, which was actually more sauce-like in consistency, already slathered on the noodles was fantastic, nearly as good as the noodles themselves.

The noodles were one of the most impressive things at the appropriately named Bao & Noodle. Each of the four dishes we ordered had a different type of noodle, perfectly suited to the meat. The Cumin braised lamb was so tender that it literally fell apart in your mouth, so the more chewy Biang Biang noodles were the obvious match. Instead of being cut, the noodles were hand-ripped, which definitely showed in the texture around the edges.

Egg noodle with XO sauce, on the right, was distinctly shrimpy, and by that I mean it tasted like seafood. The flavor had penetrated the noodles, which were long and thin, so that I could taste the quality without even eating the crustaceans.

But the beef soup was the best. I promise you that I’m not biased because it’s the dish I ordered. It took the best qualities from everything else. Its rice noodles were similar to the bao shell, with the insides being soft at first bite when they were dry, but becoming chewier in your mouth. Like the lamb, the beef came apart with each bite, and used tougher noodles to compensate. It shared the soft greens with the dumplings, as well as the rich broth. This broth though was several levels of magnitude greater. If the soup had just been broth I would have been happy. I couldn’t help from finishing it, even though I knew that would leave less room for dessert.

Normally, ordering dessert at a Chinese restaurant is a bad idea. It’s always just cakes made out of bean paste or something equally awful. But here they had blueberry milk bread toast, mango pudding, and snowskin mooncake.

The toast had been fried, with the milk caramelizing on the sides so there was a nice sweet crispness to it. The warm blueberry sauce on top was divine.P1070259

Fruit puddings are nearly always too sweet. This broke that stereotype wide open. It simply tasted like mango, but better. It reminded me of the picture in the Southern Food and Drink Museum (coming soon to a blog near you) of centrifuged peas. After running the vegetable through a blender, they put it in a culinary centrifuge and spun it for hours until they were left with an intense pea paste. This was like how I guess that would taste; intense as hell.P1070260

And for the grand finale, snowskin mooncake. I’ve described other foods as divine already, this was like eating Heaven. The rice wrapper was rather mochi like, but even softer, like a cloud. The vanilla coconut custard filling was rather chunkier than custard usually is, but tasted of all things good in this world and the next.P1070258

Bao and Noodle was unpretentious, and unlike many Asian restaurants, focussed on being good rather than being creative. If you are in New Orleans, come here. Come here first thing, so you can taste for yourself how good it is. After that, I promise you won’t be able, or want, to stay away.

Beignets Extended

I know I’ve already made a beignets blog, but back then I didn’t know that there was so much variation in the treat.

Up north in the big city park, it’s a long walk just to get beignets. But the street car runs up to it, and if you’re already in the neighborhood you should definitely come here. These beignets are rounder, with a more crispy shell, and instead of coming pre-powdered sugared, they provide you a sugar shaker. This is nice if you happen to be wearing dark clothes and don’t want to look like you just walked through a snowstorm.P1060921

Second only to Cafe Du Monde on every list of best places to get beignets in New Orleans, it certainly lived up to its reputation and name. The beignets were a good compromise between Morning Call and Famous in poofyness, about an inch and a half thick. Don’t be scared off by the small crowd, they’re very efficient and will have your beignets liberally sprinkled with sugar and ready for consumption within minutes.

As well as getting more of the normal beignets, I got a “Pig-nay,” which was like a pig in a blanket, but with a Cajun sausage and a beignet. The sausage to dough ratio was a bit off, as the sausage was really fat, but the sweet and savory went really well together.

Insectarium

P1070187Insects make up a large percentage of the world’s species, over eighty percent. Every fourth species is a beetle. Noah’s Ark would have been filled with bugs. So why is New Orleans one of the only cities to have a well-visited Insectarium?

We were looking at the cockroaches when a man who worked there walked by and told us that a cricket king cake had just come out of the oven down at the Insect Cafe. I was expecting a king cake that was decorated with crickets, not one that had crickets mixed into the batter before it was baked! There were free samples, and I must say it was much tastier than the other bugs I’d eaten; ants (truth or dare), flies (biking), and a spider (prank). They also had Mealworm salsa and beetle chutney, which weren’t bad, but the bugs didn’t nessesarily add to the texture.P1070116
As there are so many different beetles in the world, it makes sense that they’d have a large collection. Dung beetles, diving beetles, rhinoceros beetles, this terrifying thing…P1070166They didn’t have any bombardiers however, as it’s hard to safely keep an insect that can shoot boiling acid out of its butt.
More common than entire Insectariums are butterfly gardens,and this one didn’t disappoint. Most butterflies, including Blue Morphos, aren’t actually colorful. It isn’t pigment that makes them pop out, but microscopic holes in their wings that refract light. It sounds like science fiction, but I promise you, Smarter Every Day wouldn’t lie.

And for people who aren’t so much into the live bugs, there were display cases full of beetles and butterflies arranged into patterns, and of insect inspired jewlery. And, in the case of Egyptian women, live scarabs that were tethered to broches.P1070174
This museum was proof that little animals can be just as exciting, and terrifying, as the big ones, but not quite as tasty.

Beignets

Cafe Du Monde is the most well-known place to get beignets in New Orleans. But unwilling to wait in a line that stretched out the door and halfway down the block, I did not go there. Instead, an unassuming little cafe, New Orleans Famous Beignets and Coffee, the next street over was host to my first tasting of the treat.  They were described to me as “kind of like a donut, but square, and better,” so I was expecting something more like mandazi, which are Kenyan fried donuts.  Instead they were more like the lovechild of a biscuit and baklava.  The outside is a bit crisp and flaky, plus covered with enough powdered sugar that simply breathing releases storms of it, and the inside as soft as a cloud.P1060851
I can’t imagine that Cafe Du Monde’s beignets are better, because what could be better than that?  If you’re willing to wait, go right ahead, but frankly I don’t care enough.  New Orleans Famous Beignets and Coffee is fast and cheap (3 beignets for $3), and delicious. The one thing I don’t recommend is wearing dark clothing.
